Pumpkin Pie Cupcakes with Spiced Whipped Cream

I made these cupcakes for my housewarming party last year. So many people loved them, that I couldn’t wait for another chance to make them again! So my grandma needed a pumpkin dessert and this is what she got!

Pumpkin Pie Cupcakes (makes 24 cupcakes)IMG_1094


  • 2 cups all purpose flour
  • 3 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup butter – room temperature
  • 1 1/2 cups brown sugar
  • 1/2 cup white sugar
  • 4 eggs
  • 1 tsp baking soda
  • 1 tablespoon warm water
  • 1 tsp vanilla
  • 1 15-ounce can pumpkin


  1. Preheat oven to 350 degrees
  2. Whisk together flour, spices and salt in a bowl.IMG_1073
  3. In a mixing bowl, cream together butter and sugars.
  4. Mix in eggs and vanilla.IMG_1083
  5. Stir in the flour mixture and blend well.
  6. Add canned pumpkin and blend well.IMG_1084
  7. Pour batter into cupcake holders (3/4 full)IMG_1086
  8. Bake for 20-25 minutes or until the tester comes out clean.IMG_1091
  9. Cool cupcakes on a wire rack.IMG_1092

Spiced Whipped Cream


  • 2 cups heavy whipping cream
  • 1 tsp vanilla
  • 1/2 cup powdered sugar
  • 1 1/2 tsp pumpkin pie spice (add more or less for flavor)


  1. Chill your mixing bowl and attachment in the freezer for 10 minutes
  2. Then whip cream until stiff peaks are just about to form.
  3. Beat in vanilla, sugar and spices until peaks form. IMG_1089
